When I first moved out of home, I had quite a glory box stashed away – linen, lots of pottery, fine bone china, kitchen odds and ends etc. I also had a few cookbooks – not many, as I had not done much cooking apart from at school, and didn’t know how much I would come to enjoy playing around with food later on. This was pre-Internet too (wow, I cannot imagine going back to that!).

One of the cookbooks I had was a small, slim hardback, a pocket sized book almost, containing chicken recipes. It was part of a set, and I think I had 3 or 4 different ones. I can’t remember much about the books, but I do know that my chicken pie recipe came from this time, and was one of the first successful recipes I actually cooked in my new “adult” life. For many years it was a staple in my house, and I later adapted it to make a vegetarian version by just leaving out the chicken and putting in chunks of carrot, potato, pumpkin or whatever else I had lying around.

This week I decided to make a chicken pie for the first time in about 4 or 5 years. The only trouble was, as I am in between houses (move part 1 down, move part 2 coming up in about 10 days’ time!) and most of my kitchen stuff is in boxes, I have limited baking dishes at hand – and my favourite pie dish is not at hand! I am trying to use up what is in the fridge/freezer this week, and I had two sheets of shortcrust pastry to use, but they don’t quite stretch to fit the larger-than-pie-dish I had available. I ended up just improvising and making the shape of the pie slightly freeform (that’s all the rage now anyway, right?) within the dish. I was a bit worried the filling might ooze out during cooking, but in fact it worked out really well and was totally delicious.

Conveniently using a store-bought cooked chook, this pie is great cold the next day, and also reheats well.

I did blind-bake the underneath pastry sheet this time, but if short of time I don’t always bother – it depends how you like your pastry, and I don’t mind mine a bit soft and raw underneath (and yeah, I did used to nick bits of pastry and raw sausage meat when Mum was making sausage rolls, as a kid).

I also had to place a square of foil over the centre after the first 10 mins or so, or else the pastry would have burnt.

Chicken Pie

1 barbequed chicken

2 sheets frozen puff or shortcrust pastry, thawed

2 tbsp butter

2 tbsp plain flour

2 button mushrooms, finely chopped

½ green capsicum, finely chopped

1 stalk celery, finely chopped

2 tbsp fresh parsley, chopped

⅔ cup milk

1 ¼ cups chicken stock

cracked pepper, to taste

beaten egg, to glaze

Line a greased pie dish with 1 sheet of pastry. Optional – bake-blind for a few minutes until puffed up slightly.

Pull the meat from the cooked chicken, discarding skin/bones. Depending on the size of the chicken you will probably need about ⅔ of it, so put the rest aside to use in something else.

Chop the chicken meat and place in a dish with the mushroom, capsicum, celery and parsley. Set aside.

Melt the butter in a saucepan over medium heat; add flour, stir well to break up any lumps and cook until bubbling. Add the milk first and then the chicken stock, gradually, stirring constantly to form a smooth sauce. When all liquid is incorporated, fold the chicken mixture through the sauce and gently combine over low heat for a minute or so.

Pour chicken mixture into pie dish. Top with the second sheet of pastry, press down to seal edges, and glaze with beaten egg.

Bake in 200C oven for approx 30 minutes, or until pastry is puffed up and golden brown. If the pastry puffs up too quickly and starts to burn, cover with a square of foil over the centre.

For vegetarian version – leave out the chicken and instead, add chunks of vegies of your choice – if using hard vegies like potatoes, partially steam for a couple of minutes in the microwave first before adding them to the sauce. Use vegetable stock instead of chicken.

Serves 4-6 depending on appetites and what you have with it.

Spicy Chicken

I had this delicious chicken dish at my aunty’s house whilst in Melbourne over Christmas, and immediately had to try it myself when I got home. It did not disappoint, and was fabulous served with a light and refreshing Cucumber & Dill Salad and some steamed broccolini.

This salad was amazing! I did it exactly as the recipe stated, and bought a piece of Danish feta to sprinkle over the top as I thought this would be a great addition to the flavours of cucumber, dill and zucchini – however, I completely forgot until we’d finished eating, that the feta was still sitting in the fridge waiting to be used! Oh well, I’ll try that idea next time, as I fully intend to make this salad again.

You can use whatever chicken pieces you like – I love drumsticks, and they’re great for picking at cold the next day. This would be a great picnic dish too.

My quantities are double the original, so increase/decrease accordingly as you see fit!

Aunty Helen’s Spicy Chicken

1 tbsp olive oil

8 chicken drumsticks

Spice Rub:

2 tsp salt

4 tsp sugar

2 tsp ground pepper (I had a jar of ground pepperberries so used that)

2 tsp ground ginger

2 tsp curry powder

2 tsp dry mustard powder

Sauce:

6 tbsp mango or lemon chutney

2 tbsp light soy sauce

2 tbsp worcestershire sauce

a splash of white wine

Combine spice mixture and coat chicken in it (I placed it all in a plastic bag to shake it around easily). Leave for at least 1 hour (overnight is good) in the fridge.

Heat the olive oil in a pan and brown the chicken on all sides. Place in a casserole or baking dish.

Combine remaining ingredients in a small saucepan, and bring to a simmer over low heat.

Spoon over the chicken pieces.

Cover with foil or lid and bake at 180C for 40 minutes.

Remove foil/lid and cook, uncovered for a further 20 minutes.

You Say You Want a Revolution….

A quinoa one, that is. Quinoa has been a super food winner for the last couple of years, and I’ve been on that bandwagon since living in Chile, where it has always been a commonly found staple food, and for good reason – it tastes great, is easy to cook, is suitable for those with wheat allergies, and of course is extremely good for you.

There is a plethora (I just wanted to use that word cos’ it’s a cool one!) of quinoa cookbooks around these days, and I eagerly scour through every new one that comes in at my work. The recipe below is adapted from Cabbage Crockpot Casserole, from Patricia Green & Carolyn Hemming’s new cookbook, Quinoa Revolution.

I don’t usually go in for crockpot recipes that involve a heap of pre-preparation – I do like to just throw it all in – but I had plenty of time on this day so was happy to brown the mince before putting it in the crockpot, and it was simple enough to do. Everything else is just layered over the top and then it is switched on and ignored for the day.

I don’t feel the passata on the top added anything really, so next time I will just leave that top bit out – it doesn’t really mix in through the rest, and just stays as a layer of tomato “paste”, when you serve it. Just tinned tomatoes is enough I think.

Layered Beef Casserole

1 tbsp olive oil

500 gms minced beef

1 brown onion, cut into wedges

4 slices rindless bacon, fat cut off, roughly chopped

3/4 cup red quinoa

1 green capsicum, roughly chopped

2 cloves garlic, crushed

1/4 green cabbage, roughly chopped

cracked pepper, to taste

400 gm can diced tomatoes

700 ml bottle bought passata

Heat olive oil in a large pan or wok, and saute the beef for a couple of minutes, stirring to break up lumps, until lightly browned. Drain in a colander and if it is a fatty mince, rinse through with hot water.

Place meat in crockpot. Place all other ingredients on mince, layered in the order given.

Cook on LOW for 8 hours or HIGH 4 hours.

If desired, serve with mashed potatoes and a green vegetable, or salad and garlic bread.

Serves 4-6

I don’t think this wins a lot of points for looks, but the flavours are great.

Moroccan Quorn Tagine

I’ve been eating a lot of quorn lately – trying all the different forms of it, both refrigerated and frozen. So far I’ve liked everything except the “sweet chilli stir fry strips“, which were very dreary tasting and in texture were more like tofu than anything else. Meh, won’t be going for those again. Everything else, however has been quite delightful, and this Moroccan Quorn Tagine recipe from the quorn Australian website, using frozen quorn pieces, was very good.

Mine even looks pretty much like theirs, too! I didn’t bother serving with couscous or rice, as for just me it was enough to scoff into a bowl of it without any accompaniments. Very nice indeed.

I broke my vegetarian phase the other night, with a Crust mediterranean lamb pizza (loads of garlic!) – it tasted great but afterwards I felt really bloated and yuck, almost like I was being punished for eating meat! I didn’t feel at all well for the rest of the evening, a bit like when you have an MSG overload at a Chinese restaurant, which thankfully doesn’t happen often these days. I for one won’t go back to a place that does the too-much-MSG thing. The pleasure is just not worth the gesplurgledness (my word) – headache/nausea/palpitations/breathing trouble and “dry horrors” all night afterwards. Don’t get me wrong –  if you like MSG in your food then go ahead, it’s just not my thing, especially after living in Suriname where the shops sold big bags of “aji-no-moto” and didn’t understand why I didn’t add heaped tablespoons of it to every dish I cooked!

So, I think I’ll skip the meat for a while again….red meat at least. I do have a bit of a pang for chicken occasionally, and this Winter weather does makes me feel like a nice comforting roast sometimes.

Terrible weather here still…..cold, wet, windy…..roll on Spring.

Veg, Veg & More Veg

I have been lucky enough to be given two separate lots of freshly picked vegetables in the last 10 days – from a friend who works for a distribution centre that is the go-between for markets gardens and supermarkets. Wow, it has been great. Above is the first lot I was given – the second lot was slightly different and included Brussells sprouts, sugar snap peas, carrots, apples, pears and avocadoes as well as more of the above!

Of course I’ve made the most of this bounty, looking for new and old veg-related recipes to use everything up. I made a batch of chargrilled capsicum, which has turned out better than usual simply because the capsicums are so uber-fresh and sweet.

I made a big pot of vegie soup, and one night I threw a heap of vegies on to the bbq, basting them with soy sauce and grilling to perfection. OMG the mushrooms cooked like this tasted divine!

I subscribe to an ezine called Weekend Notes, which sends me a daily roundup of what’s happening in and around Perth, as well as fun activities for kids, easy recipes, restaurant/cafe reviews etc. For a morning tea at work last Friday I made Zucchini Hummus, from Weekend Notes, which came out really well, although mine actually looks a slightly different colour and not as smoothly processed, as the original. A great alternative to a chickpea hummus, and low fat as no oil added apart from the natural oil in the tahini. Mmmmm I love tahini! I made a loaf of fresh bread in the bread machine (thanks machine, for waking me at 4.15am with your loud whirring……) and cut this into squares to serve the hummus with, instead of the usual crackers.

I still have plenty of vegies left, so am thinking something quiche-related and something curry-related might be happening in my kitchen later this week. And I need to find something to make with the apples and pears.

Crockpot Vegetable Chilli

Healthy and filling, this slow cooker chilli is the perfect example of the ‘chuck it all in and turn it on’ philosophy that slow cookers are all about. To me, a slow cooker should be about convenience, so the recipes where you still have to saute things on the stove first etc are just not my idea of fun. I want my crockpot to serve my needs, and this chilli suits the slow cooker ideal so well. Plus, it tastes great!

Vegetable Chilli

2 medium zucchini (OR 1 large eggplant), chopped

1 green or red capsicum, chopped

1 medium carrot, peeled & chopped

2 celery sticks, sliced (optional – include leaves as well)

2 brown onions, chopped

425 gm can chopped tomatoes

425 gm can chickpeas, drained & rinsed

2 tsp chilli paste

2 tsp cumin, ground

225 jar salsa (hot)

140 gms tomato paste

425 gm can corn kernels, drained

cracked pepper, to taste

Place all ingredients in crockpot. Cook on LOW for 8 hours. Serve with rice or tortillas.

It doesn’t get much easier than that!

Super Duper Salmon Pad Thai

I know, I know….there’s been a definite emphasis on Thai style curry flavours in my cooking, since Christmas. I have no idea why!  Perhaps it’s the hot weather and the fact that Thai dishes are a lot lighter and fresher than the stodginess of say an Indian curry (much as I LOVE Indian curries!) or a casserole.

Whatever the reason, this recipe from the Tassal Tasmanian salmon producer’s website, is amazing! I adore Pad Thai, but the only one I’ve ever tried to make, a few years ago, was a vegetarian one and was majorly complicated. When I saw this salmon version I thought it looked too easy to be great tasting – not so. Easy yes (I made it after a day at work when tired, so that shows how uncomplicated it is), tasty yes yes yes!

I followed the recipe exactly, except I garnished with cashews instead of peanuts, as I just like them a lot better. And I was starting to make it when I realised I had completely overlooked the red capsicum when I wrote out my shopping list, and had none in the fridge – so just had to leave that out.

If you can please imagine flecks of red here and there, when looking at the photo, then you will have it about right….

I made the full serving, so as it definitely does make enough for 4 as stated in the recipe, I had it for lunch at work for the next couple of days – I could have reheated it, but I just ate it cold as a kind of noodle salad and it was delicious.

Surprisingly Good!

The weather has been perfect this week – hot during the day, but still cooling down enough to sleep properly at night. Being at work sucks when the weather’s great though!

I wanted to try this easy broccoli side dish, Madras Hari Bhari (love that name!). I actually ate this as my main course, being still in a 95% non-meat phase at the moment – I say only 95%, because I can’t resist the occasional party pie for a snack I’m afraid. And not the gourmet homemade variety either – I just like the Woolworths own-bakery ones and I like to eat them cold straight out of the packet (yeah I know it’s gross, but they just taste so GOOD that way!).

Although this was super easy, when I threw it together I thought oh I don’t think this is going to be too exciting, but in fact it tasted great. Mild curry flavour and ready in half an hour. This made enough for 4 as a side dish, but could easily be increased to make a big bowl of it as a dinner party accompaniment or a vegie dish at a party. You could also add cauliflower as well.

Mild Thai Vegies

It is really, really hot here at this time of year. I love it, as I hate the cold, but many are not happy right now. Over Christmas we had about 10 days in a row of 37-42C with no relief, and even night minimums only getting down to 23-27C.

Finally a minor cool change came through on New Year’s Day, and since then it hasn’t been too bad, but even with a bit of a cool breeze, it is still way too hot inside my tiny place to think about using the oven much. The aircon is very inefficient and there is no insulation, making it freezing in Winter and stinking hot in Summer!

On New Year’s Day, when I was in post-Hawaiian-party recovery mode and pretty much doing nothing all day, I wanted to make a healthy vegie dish to go with my crumbed salmon (which I did in the microwave rather than the oven). I also needed to make do with whatever was in the fridge, as the shops were not open and I had not yet fully re-stocked from being away for 2 weeks.

I made up this curried veg dish – Massaman curry paste is very mild, so this is not a spicy dish at all, and you could use whatever vegies you like.

Massaman Thai Vegies

1 tbsp olive oil

1 red onion, cut into wedges

2 cloves garlic, sliced

2 tbsp Massaman curry paste

400 mls coconut milk (low-fat)

400 mls tinned, diced tomatoes

7 baby potatoes, cut into quarters

2 small carrots, peeled and cut into chunks

1/2 red capsicum, sliced

kernels of 1 corn cob

2 tbsp fresh basil, torn

2 tbsp fresh mint, torn

Heat olive oil in large saucepan, and saute onion and garlic for 5 minutes. Add curry paste and cook, stirring, for 1 minute. Add coconut milk, tomatoes, potatoes and carrots. Bring to a simmer and cook, covered, stirring occasionally, for 10 minutes.

Add capsicum, corn kernels, basil and mint, and simmer for a further 10 minutes or until potato/carrot is tender, stirring occasionally.

Serves 4

Eggs In a Basket!

Last week I shared with you my (well, not mine, but my friend’s) Italian Bread Baskets, and mentioned that the options for other fillings were endless. Well, I’ve had a go at serving poached eggs in them (using Poachies, which I am totally hooked on) – and it worked really well!

One with smoked salmon (that one’s mine of course) and one topped with red casicum strips – what a great serving idea, and it only took a few minutes to trim/flatten/bake the bread pieces. Don’t they look great!
